Chef de Cuisine Luigi Troise. Chef Luigi is originally from Naples, Italy, brings over 14 years of experience working in highend kitchens across Europe and Asia. He was part of the preopening team at BluHouse – Rosewood Hong Kong before taking the helm at Red Sauce, where he focuses on delivering authentic Italian flavours using premium and locallysourced ingredients.
