OVERVIEW
“WI-SET-WI-SO” is derived from the Thai word Wiset, meaning “royal chef.” In the past, chefs who served within the royal palace were known as Wiset. The name also incorporates Wiso, meaning “beautiful” or “elegant.” Together, the name represents Thai cuisine that is prepared with meticulous care and refined beauty. Each dish is thoughtfully composed into a complete dining experience rich in flavor and shaped by the historical journey of Thai cuisine, presented through the distinctive style and identity of Chef Poom.

Panang Beef | Krabok Rice
At Wisetwiso, this main course is inspired by the heritage recipe of Khun Phra Banjerd Vichacharn, Chef Poom’s great-grandfather. Prepared with premium Le Kiw beef short rib, prized for its tenderness and rich marbling, gently simmered in aromatic panang curry. Served with yum khao, grilled eggplant, and pickled shallots to balance the richness, alongside krabok rice from Eastern Thailand. Krabok seeds are crafted into krabok butter and paired with soft, chewy Pakha Ampuen hung rice.

ABOUT CHEF
Chef Poom comes from an old Thai noble family and was raised in a household deeply rooted in Thailand’s culinary history. He learned the art of cooking from his grandmother, who once prepared food within the royal palace. This upbringing nurtured his passion for authentic Thai cuisine, meticulous cooking methods, and the subtle balance of refined flavors.
Chef Poom began his culinary journey at his family’s garden estate, first cultivated during the time of his great-grandfather. The garden is rich with a wide variety of native Thai plants, instilling in him a deep understanding of the importance of natural ingredients and the preservation of true Thai culinary identity from source to table. He later pursued formal studies in the arts, following in the footsteps of his uncle, a National Artist of Thailand, and continued his education in agriculture in Okinawa, Japan. Chef Poom also plays a key role as an organic farm consultant, supporting the development of high-quality ingredients and promoting sustainable natural farming practices.
