Familiar ingredients are reimagined through the lens of both cultures, resulting in plates that are bold, playful, and deeply satisfying.

Guests often begin with signature bites such as the Hamachi Crudo, where delicate slices of yellowtail are paired with mango sauce, chili, and spring onion, creating a vibrant balance of freshness, sweetness, and heat. The Ankimo Pâté, one of Toro Tora’s most iconic dishes, transforms Japanese monkfish liver into a rich, silky pâté served with house-pickled radish, Spanish chili, and brioche — a perfect expression of the restaurant’s East-meets-West philosophy.

Born in Spain, he developed an early passion for cooking that led him to gain experience in some of Barcelona’s dynamic kitchens before immersing himself in Japanese gastronomy. Inspired by the discipline, precision, and respect for ingredients that define Japanese cuisine, Chef Roger cultivated a distinctive culinary style that seamlessly blends Mediterranean warmth with Japanese craftsmanship.

Known for his instinctive and expressive approach to cooking, Chef Roger creates dishes that balance bold flavors, technical precision, and a spirit of sharing. His cuisine reflects both his Catalan roots and his years of experience in Japan, resulting in a unique culinary perspective that bridges two rich gastronomic traditions.

Today, Chef Roger serves as the Executive Chef of the Michelin Guide-recognized Fuego and Toro Tora in Bangkok, where he leads the culinary vision of both restaurants.
