Each course, from the delicate, masterfully structured appetizers to the pristine progression of signature nigiri, is curated based on the finest market catches. The core of our food design relies on the relationship between premium seafood and our signature shari (sushi rice), which is seasoned with 2 types of custom-blended vinegars to perfectly complement the fat content of the fish. Head Chef Yamakawa was born in a small coastal town near Tokyo and started his culinary journey when he was very young, following his brother into the world of sushi. Now he has over 30 years of experience and specializes in the traditional Edomae style sushi.
