Sanitwong Bites & Brews is a chef-led restaurant located in the Charan Sanitwong area on the Thonburi side of Bangkok. Set within a charming house with a warm and welcoming atmosphere, the restaurant offers a contemporary dining experience rooted in Thai identity, local ingredients, and thoughtful hospitality.
Our cuisine reflects a progressive Thai–Mediterranean approach, combining familiar Thai flavours with refined techniques and creative presentation. Each dish is designed to celebrate seasonal produce, respect for ingredients, and the meaningful connection between food, culture, and memory.

Our must-try dishes include Plara Pasta with Salted Fourfinger Threadfin from Pathio, Chumphon, Thai Herb Pesto Pasta with Salmon Confit, Salted Egg Carbonara with Crispy Calamari, and Thai Tea Tiramisu.
The Plara Pasta is one of our most meaningful signature dishes, inspired by the depth and complexity of Thai fermented fish flavours. It features salted fourfinger threadfin sourced from Pathio District, Chumphon, a local coastal community known for its high-quality salted fish. The ingredient is reinterpreted into a contemporary pasta dish, balancing umami, aroma, and refinement while preserving its Thai identity.
Thai Herb Pesto Pasta with Salmon Confit, Salted Egg Carbonara with Crispy Calamari, and Thai Tea Tiramisu. These dishes best represent Sanitwong’s Progressive Thai–Mediterranean cuisine, where familiar Thai flavours are reinterpreted through refined techniques, quality ingredients, and a creative contemporary approach.

Sanitwong Bites & Brews serves Progressive Thai–Mediterranean cuisine that celebrates Thai identity, local ingredients, and seasonal produce through a contemporary approach. Our menu is inspired by familiar Thai flavours and regional ingredients, reinterpreted with Mediterranean techniques, refined presentation, and a strong sense of storytelling.
Beyond our signature dishes, the menu features creative items such as Bangkok Crudo, Chicken Confit with Laab Sauce, Jasmine Rice Arancini and Ajad Salad, and Thai Artichoke Salad.
Bangkok Crudo is our Thai-inspired interpretation of a Mediterranean crudo. The dish highlights fresh seafood paired with a Thai nam pla wan sauce, traditionally known for its sweet, savoury, and aromatic depth. We reinterpret this familiar Thai flavour profile in a lighter, more refined Mediterranean style, creating a dish that is fresh, vibrant, and distinctly rooted in Bangkok.
The Chicken Confit with Laab Sauce presents tender slow-cooked chicken with the bold, aromatic flavours of Thai laab. It is served with jasmine rice arancini, transforming Thailand’s iconic jasmine rice into a Mediterranean-inspired crispy rice element, alongside a refreshing ajad salad that brings acidity, brightness, and balance to the dish.
Our Thai Artichoke Salad reflects our philosophy of using Thai ingredients creatively. Instead of imported artichoke, we use Thai banana blossom as the main ingredient, presenting it with the inspiration of a Mediterranean artichoke salad. The result is a dish that feels elegant and familiar at the same time, connecting local Thai produce with a contemporary international perspective.

ABOUT CHEF
Chef Baitong Kamares Rithdaychar is the chef-owner of Sanitwong Bites & Brews in Bangkok and currently serves as an EU Chef Ambassador in Thailand. With a background in culinary arts, hospitality, education, and international kitchen experience, she brings together creativity, cultural storytelling, and a deep respect for ingredients in her cooking.
Her culinary journey has taken her through professional kitchens in Thailand and abroad, including Australia, where she gained experience in both savoury and pastry kitchens. She was also a contestant on Hell’s Kitchen Thailand Season 1 and represented Thailand as one of the world finalists in the International Cooking with Truffle Competition in Soria, Spain.
Alongside her culinary career, Chef Baitong is currently a Ph.D. candidate in Non-formal Education and Lifelong Learning at Chulalongkorn University, where her thesis focuses on food, aesthetic experience, lifelong learning, and digital media. This academic perspective shapes her belief that food is not only nourishment, but also a powerful medium for learning, culture, memory, and human connection.
At Sanitwong, Chef Baitong focuses on Progressive Thai–Mediterranean cuisine, using local Thai ingredients and familiar Thai flavours as the foundation, while reinterpreting them through Mediterranean inspiration and refined techniques. Her cooking philosophy is rooted in sincerity, sustainability, seasonality, and the belief that food can connect people, culture, memory, and place.
