OVERVIEW
Restaurant Resonance is a casual fine dining establishment with an intimate ambiance that offers a unique culinary experience with its Boundless Cuisine concept. The co-owner and chef, Shunsuke Shimomura, has already at a young age, an impressive gastronomic journey with over 10 years of experience in award-winning restaurants around the world.

LOCATION
Located in the small alley of Soi Sukhumvit 65, there are two main roads to access the restaurant: one is by entering via Soi Pridi Banomyong 15 Alley, and the restaurant is located in Lane 3. The other road is by entering via Soi Sukhumvit 65. As you approach the restaurant, you will notice a towering mango tree standing tall against the white wall and black fence. The exterior of the building features a striking gold and black color scheme.

AMBIENCE
Resonance awes you with a stone-paved façade leading through a pearl-white door where the reception team awaits. The interior lighting and texture highlight the contemporary Japanese décor in earth tones and white. All elements are sleek to chic silvers. In addition to the main dining area, Resonance has both round and square tables and a private room for a more intimate dining experience.

FOOD
Chef Shunsuke’s latest venture, Resonance, showcases his “Boundless Cuisine” concept which celebrates the best seasonal ingredients from Thailand and Japan with a focus on pure, subtle flavors and highly specific cooking techniques that highlight each ingredient’s best form. The one-of-a-kind menu features a variety of dishes that are sure to satisfy any palate with its concept. The restaurant offers tea and wine pairing served by the sommelier.

Some of the exceptional and innovative dishes curated by Chef Shunsuke are Pla Sai: the unboned Kisu fish is seasoned with salted plum (Ume) for one day before frying to perfection and served with Talingping and plum sauce. The dish is best enjoyed by wrapping the fried fish in a fresh sesame leaf and savoring every bite. Uni Eggplant: perfectly seasoned and stuffed with Shiso leaf and pickled ginger, our Smoked Eggplant is glazed with Miso sauce and topped with Murasaki or Bafun Uni. Finished with Japanese Sansho pepper and Kinome, an unforgettable taste sensation. Beef Tongue: slow-cooked beef tongue served with a crystal-clear sauce made from Jinhua ham and yellow wine (Vin Jaune). The ham adds a light savory flavor, the wine imparts a unique aroma, and Sansho pepper brings mild heat. Topped with Kinome leaf for a complete taste experience. Mozzarella Ice Cream: a palate-cleansing course featuring extra fine texture ice cream made from Mozzarella cheese. Topped with Maldon salt, it enhances the milky taste of the cheese. Served with extra virgin olive oil, it adds a fresh aroma and makes it a staple of the entire meal.
