Opened in September 2024, Delia is a soulful addition to Bangkok’s vibrant culinary scene. Nestled in the heart of Chinatown on the ground floor of the century-old heritage building “Baan Trok”, with this intimate and atmospheric space is lovingly helmed by Chef/Patron Gabriela Espinosa and Chef de Cuisine Diego Zarco, who together bring a deeply personal and flavorful expression of Mexican cuisine to life. As Chef Gabriela shares: “Delia’s story is one of resilience and reverence for Mexican heritage.”

Named after Chef Gabriela’s beloved grandmother, Delia is a heartfelt tribute to the Abuelitas and mothers whose culinary wisdom has been passed down through generations. The restaurant honors these matriarchs not only through its food but also through its design, ambiance, and spirit of hospitality.

At Delia, traditional Mexican flavors are celebrated and reimagined using top-quality local, seasonal Thai ingredients and modern techniques—a creative dialogue between cultures that results in dishes that are both soulful and surprising. The warm, inviting atmosphere—reminiscent of a loving grandmother’s kitchen—is designed to transport guests to a place of comfort and connection, where every detail tells a story.

AMBIENCE

THE DESIGN at Delia creates a comforting, cozy space reminiscent of a loving Abuelita’s kitchen, offering guests a warm, inviting atmosphere that feels both familiar and special. Crafted by the talented team at MTM Design Studio, the interior is a thought mix of traditional Mexican elements and contemporary design. At the heart of the space is an open kitchen anchored by a handcrafted comal oven – the centerpiece that brings both warmth and authenticity. Further reinforcing the sense of home and coziness that defines the Delia experience. The design features a neutral, textured backdrop that allows vibrant colors, handcrafted patterns, and artisanal details to shine—celebrating the rich and diverse cultural heritage of Mexico. Dramatic lighting, paired with a blend of raw and refined materials, adds depth and soul to the space, creating an ambiance that’s both lively and intimate.

Guests can choose from 10 counter seats that overlook the open kitchen—perfect for solo diners, smaller parties, or intimate occasions. Here, diners enjoy a front-row seat to the culinary action while engaging directly with the kitchen team. For couples, families, or larger groups seeking a more private yet cozy experience, surrounding tables offer a slightly more secluded setting—while still maintaining an open view of the open kitchen. This layout reflects Chef Gabriela’s vision of a dining experience that mirrors a meal in a Mexican grandmother’s home: communal, honest, and full of heart & energy.

Every design element—from the handcrafted oven to the customized artisanal flatware—was carefully considered, extending the personal and thoughtful touches from the kitchen and throughout the entire restaurant. These flatware pieces, also made locally within the same region merely doorsteps away from the restaurant, emphasizes Delia’s deep connection to tradition, craftsmanship, and storytelling.

At Delia, the entire process of making corn masa is done in-house, using the nixtamalization method with the Molino machine to transform fresh corn kernels into dough. This freshly made masa is then cooked on the comal to create a variety of dishes, showcasing the versatility of corn: from classic tacos and quesadillas to ENOMOLADAS (featuring duck confit, mole amarillito, and sour cream), TOSTADA (with roasted cauliflower cream, king oyster mushrooms, escabeche, and salsa macha), TLACOYO (with yellow dal, beans, avocado, and nopal salad), and TETELAS (stuffed with stir-fried mushrooms, Mole Negro,” and smoked cheese foam). This process emphasizes tradition, craftsmanship, and the rich culinary heritage of Mexico.

BRUNCH | EL ALMUERZO (Saturday and Sunday | 12:00 – 15:30) El Almuerzo holds a special place in Mexican households, especially on weekends, and at Delia, we celebrate this tradition with a vibrant menu of savory and sweet dishes. Our offerings include masa-based specialties, classic favorites like CHILAQUILES (corn chips, red salsa, homemade chorizo, with grilled chicken or hanger steak) and HUEVOS DIVORCIADOS (sunny side up eggs with green tomatillo salsa and red salsa). To finish, enjoy freshly made PAN DE DULCE, a variety of traditional Mexican sweet pastries. Our goal is to recreate the warm and social atmosphere of visiting Abuelita’s home, perfect for a leisurely weekend start.

DINNER | CENA (Monday to Sunday | 18:00 – 23:00) Our dinner menu celebrates authentic yet innovative Mexican cuisine, rooted in tradition yet elevated by top-quality Thai regional seasonal ingredients. From the ENTRADA – STARTERS, taking inspiration from classic Mexican vibrant street food culture, dishes such as ESQUITES (Traditional Mexican Street Corn utilizing sweet and sticky corn) and CHICHARRON (Pork cracklings, Salsa Trio) are highlighted in the beginning.

Going to PLATO FUERTE – MAIN COURSE where charcoal cooking takes center stage, dishes like LENGUA EN ADOBO (Grilled Beef Tongue, Pasilla Adobo, Black Beans) and MAITAKE CON MOLE (Slow roasted mushroom, black mole and sesame tofu cream), further highlighting regional culinary exploration.

Finish with classic inspired desserts reimagined with Delia’s flair, blending tradition with modern twists and local touches, such as Delia’s version of FLAN DE CHOCOLATE (using 70% Madagascar chocolate fudge, “Rosita de Cacao” cream, and a touch of soy sauce for umami) and ARROZ CON LECHE (rice pudding with cajeta, citrus granita, and a unique mochi presentation).

This menu invites guests to experience the depth of Mexican flavors through the perspective of Chef Gaby and Diego – fostering an experience that is both comforting and adventurous.

CHEF GABRIELA ESPINOSA is a dynamic and talented Mexican chef whose culinary journey has taken her from the heart of Mexico City to the global stages of New York with Jean-Georges, San Sebastián, Shanghai, and, for the past 10 years, Bangkok. Known for her vibrant personality and relentless creativity, Chef Gaby brings a bold and heartfelt flair to every dish she creates. Before launching Delia, her most personal and ambitious project yet, she served as Head Chef at the internationally acclaimed Ms. Maria & Mr. Singh, the celebrated restaurant by Chef Gaggan. After her tenure there, she carved her own path through an independent pop-up dining series that spanned Mexico, Vietnam, and all corners of Bangkok. Her signature style combines deep culinary technique with playful, soulful flavors. It’s her unique blend of hustle, heritage, and joyful energy that leaves a lasting impression on every table she touches.

CHEF DIEGO ZARCO hailing from Mexico City, brings a laid-back charisma and fearless creativity to the kitchen. His culinary adventures have taken him from the beaches of Tulum to the vibrant food scenes of Paris and Bangkok, where he's become known for his inventive fusion of Thai and Mexican cuisines. Chef Diego has sharpened his skills at renowned establishments including Gaa and 80/20, and most recently took the reins at All Cats All Bats, where he gained attention for his boundary-pushing, heart-driven dishes. He continues to run his own pop-up dining series across Bangkok, where his playful, globally inspired creations bring people together over bold flavors and unexpected combinations. With a deep respect for local ingredients and global techniques, Diego’s cooking is a celebration of flavor, culture, and creative freedom—always served with a smile and a side of spice.
