Growing up in the Loire Valley, "the garden of France," Chef Vincent Thierry's culinary journey began at his family's table, where he discovered a passion for food and its ability to create lasting memories. He honed his skills in Michelin-star kitchens across France, culminating in his selection by the celebrated Le Cinq at the Four Seasons Hotel George V, Paris, to open the renowned 3-Michelin-star Caprice at the Four Seasons Hong Kong.

At Chef's Table by lebua, Chef Thierry partners with Head Chef Gary Alezra to orchestrate a symphony of flavors that celebrate classic French cuisine with a modern touch. Their shared commitment to excellence is evident in their meticulous selection of ingredients, favoring local and organic produce whenever possible.

Chef Thierry's culinary philosophy centers on simplicity and the pursuit of intense flavors. He believes in showcasing the natural beauty of ingredients, allowing their essence to shine through unpretentious yet sophisticated preparations.
