Chef Billy Lee — Director, Executive Chef & F&B Operations Lead

Chef Billy Lee is a highly accomplished culinary professional with over 33 years of international hospitality experience, specializing in executive kitchen management, food & beverage operations, culinary innovation, and food safety. He previously served as Executive Sous Chef and Head of Hygiene (F&B) at Shangri-La Kuala Lumpur, where he played a key role in the award-winning Lemon Garden restaurant.

As the founder of the Flavours dining concept, Chef Billy has successfully led the development of multiple F&B brands in Kuching. His distinguished career includes guest chef appointments across Asia, collaborations with Michelin-starred chefs, and leadership at prestigious global events, including the World Economic Forum (Davos 2007) and the World Oil & Gas Conference (Buenos Aires 2009).

His expertise spans a wide range of international cuisines, including French, Italian, Moroccan, Australian, South African, Northern Indian, and Arabian.

Chef Billy is also an accomplished culinary judge, serving at the World Asia Tapas and World National Tapas Competition 2025, and represented Sarawak at the World Tapas Championship in Valladolid, Spain. His career is further strengthened by international training at Nicholls State University and Cornell University, as well as mentorship under renowned celebrity chef Martin Yan.

With a proven record in culinary excellence, operational leadership, and international representation, Chef Billy continues to drive innovation and elevate dining experiences at the highest level.
