ABOUT CHEF
Christopher Ozzy Derema is the Head Chef of Zinc Restaurant & Bar, bringing over a decade of experience in Spanish and European cuisine. Originally from Bau, Sarawak, he began his culinary journey in Kuala Lumpur in 2010, starting as a dishwasher at the renowned Spanish restaurant La Bodega before working his way into the kitchen under the mentorship of experienced Spanish chefs including Chef Emilio and Chef Basilio. During his six years at La Bodega, Christopher gained extensive experience in Spanish cuisine, from breakfast service and tapas to large-scale catering operations across multiple outlets and central kitchen production.
One of the highlights of his career was cooking for FC Barcelona players during their 2013 visit to Malaysia. In 2016, he returned to Kuching to join Zinc Restaurant under Chef Jordi from Barcelona, where he further refined his skills, particularly in Josper oven cooking — with Zinc being among the first restaurants in Kuching to introduce the Josper grill concept. His dedication, leadership, and passion for Spanish-inspired cuisine eventually led to his promotion as Head Chef of Zinc Restaurant. Today, Christopher continues to blend authentic Spanish techniques with local influences, helping shape Zinc’s identity as one of Kuching’s distinctive dining destinations.
