Cavakita, derived from a blend of Latin and Bahasa, translates to “Our Cave.” Much like its name, Cavakita embraces an eclectic mix of Latin American flavours with Asian sensibilities, creating an exotic communal dining experience suitable for every occasion.

Located on Level 15 of Mercure Miri City Centre, Cavakita offers a contemporary rooftop dining atmosphere where guests can enjoy vibrant culinary creations alongside panoramic city views. Cavakita’s ambience reflects Mercure Miri’s signature storytelling concept, where ecological wonders, indigenous artistry, and contemporary hospitality blend into one immersive dining experience. Inspired by the caves, rainforests, and cultural heritage of Borneo, the restaurant features modern interiors infused with artistic local influences, vibrant textures, and warm atmospheric lighting.

The design approach follows two key presentation directions:

Among Cavakita’s most popular menu items is the Sago Coconut Panna Cotta, a creamy coconut milk infused panna cotta topped with crunchy sago pearls, inspired by local Sarawakian ingredients with a modern dessert presentation. Guests also enjoy the Cavakita Chicken Wings, featuring crispy Mexican-style spiced chicken wings glazed with sweet and spicy honey chilli sauce.

For sharing plates, the Spicy Cucumber Tomato Guacamole with Homemade Tortilla Chips combines freshly pounded avocado with chillies, tomatoes, and cucumber for a refreshing yet flavourful starter. Seafood lovers often gravitate towards the Cava Fried Clams, where fresh clams are tossed in hot oil and finished with tuak and garlic butter for a uniquely local twist.

The dinner experience is elevated further with signature mains such as the Mexican Spiced Grilled Shoulder Lamb, served with roasted cauliflower and chilli butter, as well as the Achiote Chicken with Mojo Verde — a 100-minute sous vide achiote-marinated chicken finished on the grill and paired with zesty greens and traditional Canarian sauce.

Chef Angelitha Felicia Stephen is a highly experienced culinary professional with more than 18 years of experience in hotel kitchens, culinary education, and food safety management. Currently serving as Executive Sous Chef at Mercure Miri City Centre, she is recognised for her strong leadership, culinary creativity, and commitment to delivering high-quality dining experiences.

Originally from Lawas, Sarawak, Chef Angelitha holds a Diploma in Culinary Arts from Kolej SATT Kuching and has built her culinary journey through respected hospitality establishments including Mercure Miri City Centre, Meritz Hotel Miri, Sushi King, and Momoyama Japanese Restaurant. Her expertise spans kitchen management, menu development, HACCP and Halal compliance, culinary training, and both Asian and international cuisine preparation.

Passionate about mentoring young culinary talents and continuously elevating food quality standards, Chef Angelitha combines technical precision with creative innovation to create memorable dining experiences that reflect both local identity and contemporary hospitality.
