At its core, the menu is designed around quality produce, precise execution, and distinctive local character. One of the signature highlights is the Angus Ribeye Steak, grilled using Western techniques to achieve a perfect sear and juicy medium finish, elevated with house-made sauces that subtly incorporate local aromatics for a uniquely Bornean twist. This dish represents the restaurant’s philosophy of elevating premium Western classics with regional identity.

Another standout creation is the Deep-Fried Calamari with Cincalok Belacan, a true expression of fusion innovation. Crispy golden calamari is paired with a punchy, umami-rich dip made from fermented shrimp (cincalok) and spicy shrimp paste (belacan), delivering a bold balance of texture, saltiness, and local flavour intensity that is distinctly Sarawakian. ABOUT CHEF

A proud Bidayuh chef from Sarawak, Micheal Wilton is the culinary talent behind 21 Bistro and Bo-Ni Restaurant & Bar and has built an impressive culinary journey spanning more than two decades across renowned hotels, restaurants, and international hospitality establishments. His career began in 2000 at Holiday Inn Kuching before expanding to Holiday Inn Damai Beach and Finnegan's Irish Pub & Restaurant in Kuala Lumpur. He later gained international exposure aboard Star Cruise from 2006 to 2008, where he refined his understanding of multicultural cuisine and large-scale hospitality operations. Returning to Sarawak, he continued his culinary journey with establishments including Pullman Kuching, Carvery Restaurant at Abell Hotel, Tags Restaurant, and Au Jardin French Restaurant.

Known for his creativity and strong culinary identity, he specializes in Western–Bornean fusion cuisine, combining refined Western cooking techniques with locally sourced Sarawak ingredients. His dishes reflect both technical precision and cultural storytelling, transforming local flavours into modern dining experiences. His talent and passion for Bornean cuisine have also earned public recognition through his feature on Akik's Stove Episode 8 on TV Sarawak (TVS), where he highlighted Sarawak-inspired culinary creations to a wider audience.
