Pansuh Paku Pakis Dengan Mackeral in Tomato Sauce

Pansuh Fiddlehead Fern with Mackerel in Tomato Sauce

Ingredients:

  • 1 bundle fiddlehead fern (paku pakis)
  • 3 cloves garlic
  • 2 shallots
  • 2 red chillies
  • 1 teaspoon seasoning
  • 1 bundle tapioca leaves (to seal bamboo opening)
  • ½ cup water
  • 1 small tin mackerel in tomato sauce
  • 3 tablespoons cooking oil

Method:

  1. Cut fiddlehead fern and wash thoroughly. Drain.
  2. Slice the following: garlic, shallots, red chillies.
  3. Mash the mackerel in tomato sauce.
  4. Sauté the sliced ingredients until fragrant.
  5. Add mackerel in tomato sauce with fiddlehead fern, water, and seasoning. Stir briefly and remove from heat.
  6. Place into bamboo, seal the opening with tapioca leaves, and roast over open flame for ½ hour or until cooked.
  7. Ready to serve.
