Pansuh Ayam Di Rimba

Pansuh Chicken in the Wild

Ingredients:

  • 1 whole chicken
  • 1 piece ginger
  • 2 bulbs garlic
  • 10 shallots
  • 1 bulb large onion
  • 6 stalks lemongrass
  • 2 teaspoons salt
  • 2 teaspoons seasoning (optional)
  • 1 bundle tapioca leaves (to seal bamboo opening)
  • ½ cup water
  • 1 piece white mushroom
  • 1 lime
  • 1 inch galangal

Method:

  1. Cut chicken into desired pieces. Wash thoroughly.
  2. Blend the following ingredients: ginger, garlic, shallots, large onion, lemongrass, galangal.
  3. Prepare separately: a little ginger, 2 stalks lemongrass (crushed), 4 cloves garlic, 1 piece white mushroom (thinly sliced).
  4. Mix all blended ingredients with chicken, salt, and seasoning. Marinate for 20 minutes.
  5. Then mix in the sliced ingredients together with the white mushroom.
  6. Place into bamboo, seal the opening with tapioca leaves, and roast over open flame for ½ hour or until cooked.
