Once an old tin mine, it has been transformed into a destination of indulgence for those seeking innovative Asian Tapas and perfectly crafted cocktails.

ABOUT CHEF
Chef Xavier has over 14 years of culinary experience. A Canadian national, Chef Xavier studied and worked in Montreal, before embarking on his culinary career in Asia. Before joining Banyan Tree Phuket, Chef Xavier held various senior management positions including Executive Chef of Breeze at Cape Yamu Phuket, Executive sous chef of Le Meridien Phuket Beach Resort and Spa, and Chef De Cuisine of Hua Hin Marriott Resort and Spa. He has also been a successful restaurant consultant and has helmed projects that have helped put cafes, and restaurants on the map and has been a significant voice in shaping the culinary landscape of Phuket.

Chef Xavier has a lifetime of culinary experience, having been born into a family of chefs and worked in kitchens from the tender age of 12. Having started his career at L’Incrédule, the sophisticated French bistro in Longueuil, Quebec, followed byToqué!, the stylish Montréal venue that is headed up by star chef Normand Laprise and was once selected as the “Best Restaurant in North America”. Chef Xavier is responsible for all culinary operations and concepts, overseeing four dining venues, special dining experiences well as banquets.
