Exploring through Royd's culinary lens, our team leaded by Chef Suwijak (Mond), invests extensive time in exploring the intricacies of Southern-Thai’s culinary tapestry. We delve deep into the historical roots, traditions, and techniques that have shaped the the Southern-Thai cuisine for centuries. This profound understanding allows us to curate a menu that pays homage to the past while embracing the innovative spirit of the present.

Royd restaurant features a distinctive interior design:
- Sino-Portuguese Architecture: Housed in a historic 1970s Sino-Portuguese building, typical of Phuket Old Town.

Kaeng Som

FOOD

Kaeng Som is a famous curry soup in the South. Chef reforms the orange color to black by base on beurre blanc sauce. The sauce has fish stock, Southern-Thai sour curry plate, squid ink, dried squids and Som Kak. We served grilled Andaman squids, coconut shoots, pineapple jel and Green Taro. Topped with Salmon roe.

ABOUT CHEF

Originally Phuket born and raised, Chef Mond has acclimatized with Southern Thai cuisine since he was young as his family business has run Kaab Gluay restaurant in Patong city for more than 20 years. After graduated culinary school in School of The Oriental Hotel Apprenticeship Programe (OHAP), he has proved himself to be the executive chef in foto hotel just only the age at 24.

Winning an episode of the popular Iron Chef Thailand 2020 competition gave Chef Mond even more of a following, well beyond Phuket, and the drive to share “how Southern people eat,” in a fine dining setting. He lights up when he talks about revolves his support around Southern Thai's local ingredients along with local farmers and local fishermen. He personally makes it his mission to reintroduce Southern-Thai culinary culture to well-known to mass public palate.
