Executive Chef Daniel Leah

With an accomplished career spanning over 26 years, chef Daniel brings extensive culinary expertise, experience and passion to this five-star resort.

Having graduated from the prestigious City & Guilds London and The Hotel School The Hague in the Netherlands, Chef Daniel’s career commenced with Hilton, where he sharpened his culinary skills in various food and beverage positions around the UK. His pursuit of culinary excellence led to his first Executive Chef role at the Hilton hotel in Edinburgh, followed by further leadership positions with Hilton in Saudi Arabia, India and Sri Lanka, before he joined Rotana in Bahrain and Qatar. Most recently, Chef Daniel was Complex Director of Culinary at a five-star hotel and residence in Abu Dhabi, overseeing 12 F&B outlets and a large banqueting facility with space for up to 7,000 guests.

Now, Chef Daniel embarks on an exciting new culinary journey at Phuket Marriott Resort and Spa, Nai Yang Beach, where he will oversee four diverse F&B venues – The Andaman Kitchen, Big Fish & Bar, The Lounge and Mama’s Kitchen – while also overseeing the resort’s in-room dining, private dining experiences and event catering services.

Guests can look forward to a series of exciting changes in the coming months, including mouth-watering new menus at Big Fish under a “seafood & grill” concept, harnessing locally sourced ingredients, international standards and artistic presentation to create exceptional upscale dining experiences. The menus at Andaman Kitchen will also be revamped, along with an appetizing new breakfast buffet, while Mama’s Kitchen will add more all-time-favorite Thai dishes. These new menus will be ready to serve in the first quarter of 2024.
