OVERVIEW

Helmed by multi-award-winning chef Simon Rogan MBE, Aulis Phuket is a 15-seat chef’s table restaurant at the beautiful Iniala Beach House Hotel in Thailand, and the only Michelin-starred restaurant in Phanga Nga.

AMBIENCE

The design of the chef's table was led by Creative Director Ckori Pena who drew inspiration from the desire to create an immersive and awe-inspiring space that captivates diners and elevates the dining experience; where every detail, from the textures to the lighting, tells a story. Wherever possible, local and Asian materials have been used. The Chef's Table features a locally sourced black granite countertop with a leathered texture and satin finish. Surrounding the table is hand-carved wood, charred and richly textured.

Above the guests, a drop ceiling with rich copper hues, earthy tones, and warm accents, embraces the art of light and shadow play. Around the guests, the textured walls are crafted from locally sourced Thai bamboo and agave.

In this immersive setting, the interplay of wood and dark hues, the use of light and shadow, and the enveloping textures all work together to offer diners a unique and authentic experience.

Like Simon’s other Aulis chef’s tables around the world, Aulis Phuket champions hyper-local ingredients. Our chefs develop and perfect flavours and techniques to create an almost entirely unique experience for the 15 guests at each service. The Aulis Phuket team is led by Simon, Executive Chef Oli Marlow and Head Chef Charlie Wilson.

The tasting menu at Aulis Phuket is dedicated to showcasing native ingredients, working hand in hand with local farmers and growers from across Thailand and Asia. The menu can be paired with wine or non-alcoholic drinks flights, carefully chosen by our restaurant team.

ABOUT CHEF

Simon Rogan is recognised as one of the pioneers of the farm-to-table movement, building an internationally renowned reputation. In 2002, Simon opened his debut restaurant, L’Enclume in The Lake District village of Cartmel, with a focus on hyperlocal and seasonal ingredients. The restaurant currently holds three Michelin stars. Since founding L’Enclume over 20 years ago, Simon has built his own sustainably-operated farm, known as Our Farm, and is now chef patron of ten award-winning restaurants across London, The Lake District, Malta, Thailand and Hong Kong.

In 2021, Simon’s efforts towards sustainability were recognised with the Michelin Green Star, awarded to both L’Enclume and Roganic Hong Kong, making him one of very few chefs to hold this prestigious award across two continents.
