The experience is defined by provenance and passion — from handmade pasta and premium seafood to the restaurant’s signature olive oil journey. Guests are invited to explore a curated selection of Mono Cultivar olive oils, each crafted from a single varietal and sourced from regions across Italy. These oils reveal unique expressions of terroir — from Tuscany’s bold, peppery notes to Liguria’s delicate smoothness — and are thoughtfully paired with each course to complement and enhance flavor.

Chef Vincenzo Sorrentino, affectionately known as Chef Enzo, leads Olive’s culinary team with passion born from his Italian roots and a lifelong dedication to authentic cuisine. Originally from southern Italy, he honed his craft in renowned restaurants across Europe and Asia before bringing his expertise to JW Marriott Khao Lak Resort & Spa.
At Olive, Chef Enzo transforms tradition into experience — crafting handmade pastas, sourcing the finest Italian produce, and curating an exclusive selection of olive oils from distinctive regions of Italy. He also introduces Mono Cultivar, Olive’s signature olive oil expression that captures the essence of single-varietal Italian olives, enhancing each dish with purity and regional character.
