Penthouse Bar + Grill offers premium cuts of meat and seafood from around the world are prepared with precision and passion, thoughtfully crafted by Mexican-born Marco Chávez Jaime who introduced the KOPA Oven & Parrill, giving the signature smokey flavor to all grill dishes.

Beef Tasting Experience, a masterfully curated trio of premium cuts. From Saitama, Japan, indulge in the Oguma 550-day A5 Wagyu Striploin. From Australia, delight in the Black Market Ribeye from purebred Black Angus and the Rangers Valley WX Tenderloin. Served with grilled bone marrow and expertly paired wines, this is a tasting experience that transcends the ordinary.

ABOUT CHEF

Chef Marco Chávez Jaime brings a wealth of culinary experience and expertise to Penthouse Bar + Grill. Previously, Chef Marco was the Executive Chef in the opening team at Armada Group, Shanghai, China and Executive Sous Chef in renowned establishments like POLUX by Paul Pairet and The Chop Club by Paul Pairet.

His culinary journey also includes roles as Senior Sous Chef, Junior Sous Chef, and Chef de Partie at Mr & Mrs Bung – Modern Eatery by Paul Pairet, VOL Group. In addition to his culinary career credentials, Chef Marco’s passion for food started at a young age when his grandmother, who was a fantastic home cook, ignited a genuine love for cooking in him.
