The most popular produce such as aromatic jasmine rice and premium seafood from The Gulf of Thailand to the most unfamiliar ingredients like hilltribe vegetables will be featured in a variety of reinterpreted local dishes which are flavourful, rich and diverse.

The must-try Khaoyai dry aged duck is dry-aged duck and smoked with rice straw to get a light smoky aroma. The crispy feuille de brick cigar is filled with stewed maitake mushrooms, fermented soybeans and dried chili, and is served with duck jus sauce that we slow cooked from duck bone and infused with Sich¬uan peppercorns. The emerald green chlorophyl puree will balance the saltiness and spiciness and completes the dish perfectly.
