The chef at Yakitori Torisen puts his heart and soul into every dish, grilling only chicken that is farmed by Tanba-Sasayama's like-minded farmers. He presents the first skewer of thigh meat by hand. Two guests split a heart in half and share it. Small enough pieces are presented as gyoza dumplings instead of skewers. Sousui and Oyakodon (rice bowls topped with chicken and eggs) are made using bone dashi.
