The letters shi, which means will, and en, which means connection to people, are combined to form the name Shien. It can also be read as shien or support. One special touch on the set menu is the bowl of chicken soup. After the yakitori is prepared, rice is boiled in an earthenware pot and barbecued over bincho charcoal. The essence of chakaiseki is expressed through the warabimochi and moistened chopsticks.
