While learning Japanese cooking techniques, the owner fell in love with the flavor and superior fat content of Anago, or conger eel, and opened the specialty restaurant Kitahama Anagoya. Seawater-grown Anago (conger eel) is wonderful both raw (sashimi) and cooked (tempura, among other meals), each showcasing the distinct flavor of the fish.
