Inspired by his father, who was a chef, Chef Mitsutaka Tsukihara developed a passion for cooking from an early age and continues to express his culinary philosophy through the values deeply rooted in Japanese food culture.
For A Rare Kaiseki Journey, Chef Tsukihara presents an authentic expression of Washoku — Japan’s traditional culinary philosophy that celebrates seasonality, balance, and respect for ingredients. Through this exclusive menu, he invites guests to experience the understated elegance of Kaiseki dining through thoughtful sequencing, delicate technique, and a genuine connection between food and season.

Unlike conventional omakase experiences, Kaiseki unfolds as a curated sequence of courses where flavour, texture, temperature, and presentation evolve throughout the meal. Guests may also select an optional sake pairing, thoughtfully chosen to complement the menu and deepen the overall dining experience.
