Chef Kirk is from the southwest coast of England, and adheres to a philosophy of “Reinventing British” in that his perpetually evolving menu is focused upon seasonal and fresh ingredients used in simple, crafted dishes that reflect creativity and tradition. The wine list displays almost 500 labels from the Old and the New World.
MUST TRY: Irish Majestic oysters with artichoke foam and Oscietra caviar.
The view from the top of the hotel tower is, naturally, breathtaking, with diners peering right across Marina Bay and out to the ships in the harbour. Jaan’s tables are all well spaced, and the overall colouring of the décor is a gentle russet brown.
For a relatively small restaurant the service team is substantial, and the attention and care lavished upon diners equates to the care that goes into crafting each dish.
Both the lunch and the dinner servings are set menus of between four and eight courses, with the option of wine pairings. There is a choice of vegetarian menus, into which the kitchen puts as much creativity as its fish and meat dishes. All the menus change frequently to take advantage of the best seasonal offerings from around the world.

Chef Kirk has established himself and his reputation firmly since taking over as chef in 2015, the clean and honest flavours displaying a deceptive simplicity. Jaan is an impressive restaurant in which to entertain business associates.
