OVERVIEW
At Guilty you’ll undertake a gastronomic journey around Latin America, from tantalizing Peruvian plates with Nikkei influences, to spicy tacos and cocktails inspired by the continent. Chef Carlos prepares modern Latin American dishes with Peruvian flavors and a Nikkei twist like ceviche in leche de tigre and the tuna acevichado roll.

AMBIENCE
The interior space combines bold geometry with earthy green and amber tones to create a distinctive aesthetic inspired by the works of Richard Artschwager and the pop art movement. An oversized resin cast feature light that hovers over the central space as an abstract art piece, and masterpieces from local creators including Melanies Greis, Nakrob Moonmanus, Kitikong Tilokwattanotai and Phannapast “Yoon” Taychamaythakool.

Chef Carlos Rodriguez brings his passion for traditional Venezuelan and wood-fired dishes to Guilty, preparing modern Latin American dishes with Peruvian flavours and a Nikkei twist. Some of his mouthwatering dishes are Holy Guacamole (Avocado Guacamole Prepared Table Side, Crispy Tortillas), XXL Gambas “Camarones Salteados” (Star Anise Flambéed Gambas, Garlic, Bisque, Calabrian Chillies, Lemon and Parsley), Exquisite Encounter (Burrata, Tomatoes, Grapes, Pickled Aji Limo, Botija Olives, Goji Berries, Walnuts). The service is efficient and professional without being overbearing. Under the expert supervision of manager Mark Ugrai, the wait staff is pleasant and always attentive. The sommelier, Khun Eik, is at hand to suggest the best wines for pairing with the selected food.
