Front Room is a Thai-inspired Nordic high-end cuisine restaurant at the Waldorf Astoria Bangkok on Ratchadamri Road. Probably the most exciting and innovative cuisine that has recently opened in Bangkok.
The interior of the open-spaced room positioned directly at the front of the Waldorf Astoria boast of the high lofty ceiling, Nordic light wood furnishings and sofa banquette seating. After 12 years abroad, working at three-starred restaurants and at one of the world’s most progressive kitchens, Noma, Chiang Rai born head chef Rungthiwa Chummongkhon (Fae) pulls from her Scandinavian cooking skills mastered to offer tasting menus that also give a nod to her Thai heritage. Front Room’s unique, daring and challenging fusion of locally sourced Thai ingredients, like lemon grass and produce from Royal Project, combined with Nordic cooking technique defies labels and reveal a new way of thinking about flavours.

Front Room the design is minimalistic refinement with maximum comfort against a muted blue, grey and copper-gold theme with an atmosphere which surprisingly manages to create a congenial, welcoming atmosphere.
The excellent service contributes to the fine dining experience. The wait staff are courteous, gracious, attentive but never intrusive.
Chef Fae utilizes staple Scandinavian techniques such as pickling, fermentation, curing and smoking to elevate, and not overpower, the existing flavours of Thai ingredients. She creates an amazing tasting menu and the set menu changes every 2-3 month. Front Room offers also the à la carte menu with original sounding creations such as “Blue of the Sea”, “Raised in Korat” or “Born in Chiang Rai, Braised in Bangkok”.
All dishes are cleverly crafted, such as the Atlantic salmon with a sweet carrot sauce or toothfish dressed in the salty-bitter tang of seawater; preserved carrot rolls or the large, sweet lobster like prawn, cooked just so, slightly charred and Riceberry sourdough and Housemade Soya butter” made with the Thai black rice with low GI instead of wheat delivering the expected chewiness texture and complemented with Front Room’s signature “Soya Butter” instead of original salted butter. Familiar dishes include egg yolk and rich mussel velout. You can also elevate your meal with juice pairing or wine pairing options. The foods are exciting and bursts with flavours and the dishes reflect the intended spices perfectly.
Selected by a team of in-house experts, Front Room offers a unique selection of wines not only by the bottle but by the glass as well. Try the Stéphane Tissot, Crément De Jura Rosé, Extra Brut, the Julien Schaal, Rosacker Calcaire, Grand Cru, Riesling, Alsace, 2017 or the Enderle & Moll, Liaison, Pinot Noir, Baden, Germany, 2015.

The dishes served at the Front Room are not just food to be called modern Thai, it’s a uniquely, creative fusion between Thai and Nordic. The mix of culture is surprising but the meal is balanced and delivers a creative and new memorable dining experience in Bangkok’s increasingly competitive culinary scene. Finding the delicate balance between West and East, between Thai and Nordic in this modern menu might be a serious task but not an impossible feat to achieve by a chef of her calibre. If eventually done though there is not much to make a comparison or even a reference, Chef Fae’s unique personality and creativity will have the Michelin stars calling.
