PROFILE
Housed in a restored 1916 Neo-Renaissance building, Jean Georges Shanghai is located on the Bund, a waterfront stretch of 52 buildings in varying architectural styles. Jean Georges features a mix of the finest natural ingredients done in unique and fascinating ways which light up not only the taste buds but all other senses. Under the direction of Executive Chef Paul Eschbach, classic French dishes are transformed with the aid Asian special seasonings and flavor combinations.

MUST TRY:
Must try dishes would have to be the egg with caviar, warm seafood salad, and salmon fava bean.

AMBIENCE
The interiors are decorated by antique mirrored walls that gives enchanting views of the art deco stretch of the Bund and Shanghai’s Blade Runner-esque skyline as well as discreet reflections of the other diners. The space is simply beautiful and chic, very modern and spacious.

SERVICE
Staffs are impeccable with their exceptional service. The place has a unique style and vibe and the level of attention is exceedingly amazing.

FOOD
The menus for all the fixed-price three meals are short but consist of the kitchen’s best. Highlights include tuna tartare and avocado in a ginger marinade; foie gras and madai crusted with nuts and seeds in sweet and sour jus; foie gras brule, asparagus with morel mushrooms, matai fish and squab; the amuse bouche (salmon sushi with a fried cheese, and a truffle potato ball with truffle cream); Delicious Scallops accented with light crispy parsnips. The dessert menu includes Vongerichten’s signature dessert — molten chocolate cake with vanilla ice cream. But while food menus at the Shanghai restaurant aren’t necessarily lengthy, the wine list is extensive with over 500 bottles, tilted towards American and French vintages

SUMMARY
Note that the entrance to the restaurant is on Guangdong Road. The dishes are of decent portion and designed such a way that few fell on the low note – with the peaks and valleys in order. Jean-Georges is a breath of fresh air.
